Does it pop out if you depress and release it? Looks to me like the switch that provides some kind of electrical isolation although I've never actually known exactly what it isolates lol

Yes e28/e24 interchange but note that the rear bar will be different for '83/'84 models due to the diff cover. Also bigger bars will require reinforcement to the chassis. Have you looked in OEM? I'm almost certain they are the same across many E28 and E24 models, but suspect the ones for M cars might well be different/beefier.

What do you plan to recharge the system with? My understanding is that R12 hasn't been available (legally) for many years, but that you can't simply use R134A instead because the the system will get completely clogged up due to a mismatch between oil types each uses.

And yes, it is a very strange noise! It's clearly engine speed dependent and kind of sounds to me like frictional contact rather than mechanical. Clutching at straws, and I'm no engineer, but could a very dry oil seal give rise to that kind of thing?
