Car: 1985 635CSi - 01/1985 production
Problem: Temp gauge goes from cold to normal and back whenever it feels like it. My gut is telling me it's a sender. Unfortunately, I don't have a clue as to which of the 4 temperature related parts it is. It has a new Programma SI board installed, so I don't think it is anything to do with that. Of course, I could be wrong.
Can someone point me in the right direction?

sounds like a loose connection, was it doing this before the new SI board was installed?

Yes, the gauge was doing this before the SI board went in. I checked connections on the senders (I think), and hit them with DeOxit. What pushed me to post is, Thursday, just before I got home, the gauge went to cold and stayed there, which triggered my thought about a sender.

Don't forget to check the wiring to the sensor while troubleshooting. Mine had a semi-broken wire, giving similar behavior as your temp gauge.
The M88/3 was all about power, no cats. At idle the raw fuel from the exhaust will make your eyes water like an old V-8 powered muscle car's exhaust did.

Thank you, I will do that, but I still don't know which sensor is the temp sensor to the gauge.

That's the one that times out the cold start valve.
