Next job is to revisit the non functioning drivers electric headrest. Motor is reassuringly whirring away, so I suspect I will have to trim down the outer sheath of the Bowden cable drive. I don't know for sure but think it's very unlikely anything for another model will fit adequately. Afaik availability of genuine flaps was discontinued quite a long time ago so I think you'll struggle to find anyone with a supply other than where they might have squirrelled some away, but no longer ...

I'm afraid I don't have an answer, but would in any case wonder if a separate flush is required? Is it something BMW routinely do when replacing brake fluid on cars of that era? At least in the UK these seem easy enough to get hold of and aren't very expensive - £64 is what I just came up with on a simple search. And that particular one is manufactured by Bremi.

Sounds like a good plan. I wonder if you might also consider replacing the caliper piston seals if as old as the rest of the system? That said, if the pistons move relatively smoothly and easily, and with no fluid escape, you might be ok to leave them.

It's an anodised finish and no amount ordinary cleaning will touch it. I ended up grinding mine back to bare aluminium. Getting an assistant to cycle the brake pedal down and back up with the bleed valve opened and then closed off again is probably the most reliable bleed method out there.
